Cohorsil co-op was founded in 1980 and provides training and technical assistance to more than 580 coffee farmers, most of whom farm on five or fewer hectares. Cerro Azul is a Strictly High Grown blend composed of catuai, pacas, and caturra varietals. The harvested coffee is received in cherry form at one of the co-ops wet mills. Processed beans are initially pre-dried in the sun and then mechanically dried in Guardiolas.
